A couple of weeks ago I was lucky enough to be invited along to celebrate #TacoTuesday with Old El Paso. Matthew and I love Mexican food and I adore all things cooking, so the chance to toast Mexico’s independence with delicious fajitas, cookery and a glass of white was perfection.
One of our chefs for the evening with one of the many spice mixes available! This was the second event I’ve been invited to at the Underground Cookery School and it’s always pitched so well – I picked up some great tips while not getting overwhelmed with jargon.

Have you tried the new boaty-fajitas (note: not their actual name, I believe Old El Paso went with ‘Stand and Stuff’)? Much easier to fill, but still with the potential to explode as you chow down. I love the potential for drama and getting ones hands dirty. Here’s my veggie effort!
As well as fresh guacamole and scrumptious fajitas, we also made a gorgeous chocolate torte! It’s flour free, so I’ll definitely be rustling it up for my friends who avoid flour soon!
